
CHEESY BACON STUFFED PEPPERS
INGREDIENTS
1 bag Mini Sweet Multi Colored Peppers (10-16oz)
½ cup Cream Cheese
½ cup Shredded Cheddar Cheese
1 Green Onion, Diced small
5 Thick Strips Bacon
¼ tsp Salt
¼ tsp Pepper
1/3 cup Bread Crumbs
*CHEFS NOTE - if peppers seem larger than 2” double the amount of both cheeses and green onion.
METHOD
Pre-heat oven to 400°
In a frying pan, cook bacon strips until crispy. Remove from pan, onto a plate lined with a paper towel. Once cooled, pat grease off bacon and chop it into small bits.
Half peppers lengthwise, and remove seeds. Set aside for stuffing.
In a mixing bowl, combine cream cheese, cheddar, green onions, bacon, salt and pepper. Mix well until all ingredients become well incorporated.
With a spoon, stuff peppers with cheese mixture, leveling off once the pepper cavity is filled.
Spread breadcrumbs out on to a small plate. Dip the peppers, cheese side down to coat with bread crumbs. Place peppers onto baking sheet with the cheese and breadcrumb side up.
Place into 400° oven for 25 minutes. Remove and let cool a bit before serving.
Total cooking time: 45 minutes
Difficulty: Easy – intermediate
Yield: 26-30 pieces
